Red Bean And Rice Salad - cooking recipe

Ingredients
    1/2 lb. smoked low-fat turkey sausage in casings
    1 c. plus 3 Tbsp. garlic red wine vinegar
    1 (15 or 16 oz.) can red beans, drained and rinsed
    1 c. cooked brown rice
    1/2 c. cucumber, peeled, seeded and diced
    1/2 c. sweet red pepper, cored, seeded and diced
    1/4 c. celery, diced
    1/4 c. green onions, thinly sliced
    1 Tbsp. extra virgin olive oil
    2 tsp. coarse grain mustard
    1 Tbsp. fresh thyme, minced
    1 clove garlic, minced
    1/2 tsp. hot red pepper sauce
    salt and freshly ground black pepper to taste
Preparation
    Combine sausage and 1 cup vinegar in a nonreactive saucepan; bring to a boil over medium heat.
    Cover, reduce heat to low and simmer for 5 minutes, or until sausage is cooked through.
    Remove sausage from vinegar; cut into 1-inch pieces and set aside.
