Barbecue Oriental Chicken - cooking recipe

Ingredients
    1 chicken, cut up
    1/2 c. soy sauce
    1 tsp. ground ginger
    1/2 tsp. black pepper
    3 to 4 cloves garlic, minced
    1 Tbsp. peanut oil
    1/4 tsp. red pepper (optional)
Preparation
    Place chicken in dish.
    Sprinkle with spices.
    Pour soy sauce and peanut oil over chicken.
    Cover with tight-fitting lid.
    Shake until chicken is well-saturated.
    Place in refrigerator.
    Light coals in grill.
    Occasionally shake chicken while marinating.
    When coals are grey (45 minutes to 1 hour), place chicken on grill. Cook over medium heat about 1 1/4 hours.
    Baste occasionally with remaining marinade.
    Discard remaining marinade.
    Serve chicken on a bed of steamed rice and garnish with pineapple slices if desired.
