White Lightning Chili(8 Servings) - cooking recipe

Ingredients
    1 lb. Great Northern white beans, rinsed and picked over
    2 lb. boneless chicken breasts or firm tofu (for vegetarians)
    1 Tbsp. olive oil
    2 medium onions, chopped
    4 garlic cloves, minced
    1 pt. sour cream
    2 to 4 Tbsp. chili powder
    2 tsp. ground cumin
    1 1/2 tsp. oregano, crumbled
    1/4 tsp. cayenne pepper
    6 c. chicken stock or broth
    3 c. grated Monterey Jack cheese (12 oz.)
Preparation
    Put beans in large, heavy pot.
    Add enough cold water to cover 3 inches above beans and soak overnight.
    Either fry or simmer chicken about 15 minutes until tender; drain.
    Cool.
    Remove skin. Cut chicken or tofu into cubes.
    Drain beans.
