Braised Mud Hens - cooking recipe

Ingredients
    3 to 4 mud hens, dressed
    salt and pepper
    flour
    butter
    cooking oil
    1/2 c. sherry wine
    3 onions, cut up
    1/4 c. celery, chopped
Preparation
    Cut up hens into serving size pieces and season with salt and pepper.
    Coat with flour and brown in half oil and half butter. Pour off fat and cover hens with water.
    Add sherry, onions and celery.
    Cover pan and simmer until tender.
