Brown Mushroom Soup(Serves 6) - cooking recipe

Ingredients
    1 lb. mature (dry, not slimy) mushrooms, diced
    1/2 c. celery, diced
    1/2 c. carrots, diced
    1/4 c. onion, diced
    3 c. water
    rich chicken or beef stock
    salt and pepper to taste
Preparation
    Cover mushrooms, celery, carrots and onion with water in 2-quart saucepan.
    Simmer, partially covered, for about 45 minutes.
    Add stock to make 6 cups of liquid.
    Add salt and pepper to taste.
    Heat through.
