Cinnamon Cucumber Rings - cooking recipe

Ingredients
    2 gal. large cucumber rings
    2 c. lime
    8 1/2 qt. water
    1 c. vinegar
    1 tsp. alum
    3 tsp. red food coloring
Preparation
    Place 2 gallons large cucumber rings in large container with lime and water.
    Soak for 24 hours.
    Drain and wash well.
    Soak 3 hours in cold water.
    In a pot mix vinegar, alum and red food coloring.
    Add cucumber rings and cover with water.
    Simmer for 2 hours.
    Do not boil.
    Drain and throw away solution.
