Chicken Monterey - cooking recipe
Ingredients

1 1/2 lb. (4) chicken breast halves (boneless, skinless)
1/4 tsp. salt
1/8 tsp. pepper
1/3 c. barbecue sauce (bottled)
8 slices bacon, cooked
1 c. Cheddar cheese, shredded
4 scallions, trimmed and sliced
1 small tomato, chopped
Preparation

Heat oven to 350\u00b0. Coat 3-quart baking dish with cooking spray. Place chicken in dish; add salt and pepper. Spoon on sauce. Bake in oven for 20 minutes, until internal temperature registers 160\u00b0. Top each breast with 2 slices cooked bacon. Sprinkle with Cheddar. Bake 5 more minutes; top with scallion and tomato.
