Creamy Rice Pudding - cooking recipe

Ingredients
    1/2 c. uncooked long grain rice
    2 1/2 c. water
    1/4 tsp. ground cinnamon or 1 cinnamon stick
    2 (1/2-inch) lemon rind pieces
    Dash of salt
    1 (14-oz.) can sweetened condensed milk
    Additional ground cinnamon as garnish
Preparation
    In a medium saucepan, combine rice, water, cinnamon, lemon rind and salt.
    Let mixture stand 30 minutes.
    Bring mixture to a boil, stirring occasionally.
    Add condensed milk, mix well.
    Return to a boil, stir.
    Reduce heat to medium, cook uncovered, stirring frequently for 15-20 minutes or until liquid is absorbed to top of rice.
    Remove cinnamon stick and lemon rind, cool (pudding thickens as it cools).
    Place in serving dish or bowls and sprinkle with cinnamon if desired.
    Makes 4-6 servings.
