Chicken In Tomato Tarragon Cream - cooking recipe
Ingredients

seasoned flour
1 1/2 Tbsp. chopped shallots
3/4 c. white wine
1 c. coarsely chopped tomatoes
1 1/2 tsp. lemon juice
3/4 c. heavy cream
2 tsp. fresh tarragon or other herb
salt and pepper to taste
Preparation

Dredge chicken in seasoned flour.
Heat butter in large saute pan until butter stops sputtering.
Place chicken pieces in the hot butter in the pan and cook until golden.
Brown second side, then add chopped shallots.
Continue cooking a minute or two, then add the wine.
Stir to dissolve browned particles in bottom of pan.
Add chopped tomatoes and lemon juice.
Cook, stirring for a few minutes, then add cream.
