Relish - cooking recipe

Ingredients
    4 c. ground unpeeled cukes
    1 c. ground green pepper
    1/2 c. ground sweet red pepper
    3 c. ground onion
    3 c. finely diced celery
    3/4 c. salt
    3 1/2 c. sugar
    2 c. white vinegar
    1 Tbsp. celery seed
    1 Tbsp. mustard seed
Preparation
    Use coarse blade on grinder. Combine all vegetables in large bowl. Sprinkle with salt; cover with cold water. Let stand 4 hours. Drain in colander. Press excess liquid out.
    Combine sugar, vinegar and seeds. Bring to boil. Stir until sugar dissolves. Stir in drained vegetables. Simmer 10 minutes. Pack into sterilized jars and seal. Hot water bath 10 minutes. Makes 5 to 6 pints.
