Pork Roast - cooking recipe

Ingredients
    1 pork ham (10 to 15 lb.) with skin on
    4 Tbsp. margarine
    4 Tbsp. flour
    drippings and juice from roast
Preparation
    Slice the pork skin with sharp knife in thin slices through the fat.
    Salt all sides of pork.
    Cook at 325\u00b0 for 40 minutes per pound.
    During cooking, pour cold water over roast several times. When finished cooking, before removing from oven, turn temperature up to 400\u00b0 to brown the rind; this will also make it crisp.
    Save all the juice and drippings for the gravy.
