Salmon Cakes - cooking recipe
Ingredients

1 can pink salmon
2 eggs, beaten
3/4 c. mashed cold potatoes
1/2 box crushed saltine crackers
Preparation

Debone salmon and remove skin coating.
Mash salmon.
Mix in beaten eggs and mashed potatoes.
Roll into oyster size oblong shape.
Roll in crushed crackers.
Fry quickly on both sides in fresh Crisco oil.
Drain on paper towels.
Makes 12 to 13 large rolls.
