Sweet Potato Cake - cooking recipe

1 1/2 c. salad oil
5 eggs
2 c. sugar
2 1/2 c. sifted cake flour
1 tsp. nutmeg and 1 tsp. cinnamon or 2 tsp. pumpkin pie spice
1/4 tsp. salt
1 Tbsp. baking powder
4 Tbsp. hot water
1 1/2 c. raw sweet potatoes, grated
1 c. chopped pecans
2 tsp. vanilla extract
Preparation

Beat oil, sugar and egg yolks until smooth.
Add hot water. Combine dry ingredients and sift into sugar mixture.
Stir in pecans, potatoes and vanilla, continuing to blend.
Beat egg whites until stiff and fold into mixture.
Bake in a greased, shallow pan at 350\u00b0 for about 30 minutes.
