*Zucchini Rounds - cooking recipe

Ingredients
    1/3 c. biscuit mix
    1/8 tsp. pepper
    2 c. shredded, unpared zucchini
    1/4 c. Parmesan cheese
    2 slightly beaten eggs
    2 Tbsp. butter
Preparation
    Mix biscuit mix, cheese and pepper.
    Stir in eggs and beat until moistened.
    Fold in zucchini.
    Fry in 2 tablespoons butter, about 3 minutes on each side.
    Makes about 12 cakes or 6 servings.
