Chicken Provencale - cooking recipe
Ingredients

1/2 tsp. salt, divided
3 chicken breast halves
3 chicken thighs
3 chicken drumsticks
1 Tbsp. vegetable oil
1 1/2 c. green pepper, chopped fine
1/2 c. chopped onion
2 tsp. basil
1 clove garlic, minced
1 (1 lb.) eggplant, peeled and cut crosswise into 1/4-inch slices
2 medium tomatoes, peeled and cut crosswise into 1/4-inch slices
1/4 c. chopped fresh parsley
Preparation

Skin chicken.
Sprinkle salt over chicken (set aside).
Heat oil in a large, nonstick skillet over medium heat.
Add chicken; cook 5 minutes on each side or until browned.
Arrange chicken in a 13 x 9-inch baking dish; set aside.
