Broccoli-Rice Soup - cooking recipe
Ingredients

1 Tbsp. olive oil
1 c. chopped onion
5 c. chicken broth
1 c. chopped tomato
1/4 tsp. salt (optional)
1/4 tsp. black pepper, coarsely ground
1/8 tsp. ground red pepper
4 c. chopped fresh broccoli flowerets
2 Tbsp. plus 1 tsp. grated Parmesan cheese
Preparation

Heat oil in saucepan over medium-low heat.
Add onion; cover and cook 10 minutes or until tender.
Add broth and next 5 ingredients; bring to boil.
Cover, reduce heat and simmer 15 minutes.
Add broccoli; cover and cook 7 minutes or until rice and broccoli are tender.
