Southern Sole - cooking recipe
Ingredients

4 Tbsp. butter
salt and freshly ground pepper
1/2 c. mandarin juice
2 Tbsp. butter
2 fresh sage leaves, minced
6 sole filets
2 Tbsp. mandarin peel
2 tsp. lemon juice
1 tsp. fresh parsley, minced
Preparation

Melt butter over low heat in large skillet, add fish, turning so each piece is well buttered.
Salt and pepper to taste, cover pan tightly and cook over very low heat until fish flakes easily, 6 to 8 minutes.
Remove to a heated platter and keep warm while preparing sauce.
