Country-Time Carrot Bread - cooking recipe

1 (10 oz.) pkg. frozen crinkle carrots (in butter sauce)
1 3/4 c. flour
1 1/2 c. light brown sugar
1 tsp. salt
1 1/2 tsp. soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/3 c. cooking oil
2 eggs, beaten
1/3 c. water
1 tsp. vanilla
Preparation

Cook carrots according to package directions. Place carrots in blender; grate coarsely. Do not puree. In a large bowl, combine flour, sugars, salt, soda, cinnamon and nutmeg. Stir together carrots, oil, eggs, water and vanilla. Add to dry ingredients and stir until well blended. Pour batter into a greased 9 x 5 x 2 3/4-inch loaf pan. Bake at 350\u00b0 for 65 to 75 minutes. Cool.
