Pepper Steak - cooking recipe

Ingredients
    3 c. cooked rice
    1 lb. lean beef
    1 Tbsp. paprika
    2 Tbsp. butter
    2 cloves garlic
    1 1/2 c. beef broth
    1 c. sliced green onions (fresh)
    2 green peppers, chopped
    2 Tbsp. cornstarch
    1/4 c. each: water and soy sauce
    2 large tomatoes, quartered (optional)
Preparation
    While rice is cooking, pound steak and cut into bite size pieces.
    Sprinkle meat with paprika; allow to stand while preparing other ingredients.
    Using a large skillet, brown meat in butter. Add garlic and broth.
    Cover; simmer for 30 minutes.
    Add water, if needed.
    Stir in onions and green peppers.
    Cover; cook 5 minutes more.
    Blend cornstarch, water and soy sauce; stir into meat mixture, stirring until clear and thickened (about 2 minutes).
    Add tomatoes and stir.
    Serve over rice.
    Serves 5 or 6.
