Pumpkin And Raisin Cake - cooking recipe
Ingredients

2 c. sugar
2 c. canned pumpkin
3/4 c. oil
4 eggs
2 c. flour
1 tsp. baking powder
2 tsp. soda
1 tsp. salt
1 tsp. cinnamon
1 tsp. nutmeg
1 (8 oz.) can crushed pineapple, drained
1 c. raisins
1 c. chopped pecans
2 tsp. vanilla extract
Nutty Cream Cheese Frosting
1/4 c. chopped pecans
Preparation

Beat sugar, pumpkin, oil and eggs in mixer bowl.
Combine flour, baking powder, soda, salt, cinnamon and nutmeg in bowl; mix well.
Add to egg mixture.
Beat at medium speed for 1 minute. Stir in pineapple, raisins, 1 cup pecans and vanilla.
Pour into greased 9 x 13-inch cake pan.
Bake at 325\u00b0 for 50 to 55 minutes. Cool completely.
Spread Nutty Cream Cheese Frosting over cooled cake.
Sprinkle with remaining 1/4 cup pecans.
