Lentil Vegetable Soup - cooking recipe

Ingredients
    1 Tbsp. olive oil
    2 1/2 c. chopped green peppers
    2 c. chopped onions
    1 tsp. minced garlic
    8 c. chicken broth
    2 c. water
    1 lb. dried lentils, softened and rinsed
    2 c. sliced carrots
    2 large potatoes, cut in 1-inch chunks
    1 lb. fresh spinach or 1 pkg. frozen chopped spinach
    8 oz. reduced fat kielbasa, cut into 1/4-inch 1/2 rounds
Preparation
    Heat olive oil in 6 to 8-quart pot over medium heat.
    Add green peppers, onions and garlic.
    Cook 6 to 8 minutes until vegetables are soft.
    Add broth, water, lentils, carrots and potatoes.
    Bring to boil; reduce heat.
    Cover and simmer for 50 minutes, stirring occasionally.
    Stir in spinach and kielbasa. Simmer 8 to 10 minutes until lentils and spinach (if frozen) are thoroughly cooked.
    Makes 16 cups.
