Flavorful Eggplant Casserole - cooking recipe

Ingredients
    1 small eggplant (unpeeled), cut into 1/2-inch thick slices
    1 lb. lean ground beef
    3 medium-size green tomatoes, cut into 1/4-inch thick slices
    2 medium-size green peppers, cut into 1/4-inch thick rings
    2 medium onions, thinly sliced
    1 (28 oz.) can whole tomatoes, drained and cut into quarters
    salt and pepper
    1 lb. medium-sharp Cheddar cheese, thinly sliced
Preparation
    Cook eggplant in boiling salted water 5 to 8 minutes or until barely tender; drain well.
    Brown beef in a skillet until done, stirring to crumble; drain well.
