A Hearty Eggplant Sandwich - cooking recipe

Ingredients
    2 slices rye or other grain bread
    4 thin slices eggplant, fried in olive oil or grilled
    1/2 roasted red pepper
    2 thin slices red onion
    generous amount chopped greens (lettuce, spinach or watercress)
    olive oil and vinegar
    goat cheese
Preparation
    On one slice of bread, layer eggplant, roasted red pepper, onion slices and chopped greens.
    Add dash of oil and vinegar. Spread the remaining slice of bread with a generous serving of goat cheese.
