Apple Bread - cooking recipe

Ingredients
    vegetable cooking spray
    2 c. sugar
    1 c. oil
    3 eggs
    3 c. all-purpose flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
    2 tsp. vanilla extract
    2 c. chopped, peeled baking apples
    1 c. chopped pecans
Preparation
    Preheat oven to 325\u00b0.
    Spray 2 loaf pans with vegetable cooking spray.
    In a large bowl, using an electric mixer, beat together the sugar, oil and eggs.
    In a separate bowl, stir together dry ingredients.
    Add dry mixture to batter; mix just until blended.
    Stir vanilla, apples and pecans into batter.
    Pour batter into prepared loaf pans.
    Bake for 1 hour, or until inserted knife comes out clean.
    Yields 2 loaves, 16 servings each.
    Each serving contains 189 calories (47% from fat).
