Vegetable Relish - cooking recipe

Ingredients
    12 green sweet peppers (5 c.)
    7 large onions (4 c.)
    1 medium head cabbage (4 c.)
    10 green tomatoes (4 c.)
    6 sweet red peppers (1 1/2 c.)
    1/2 c. pickling salt
    6 c. sugar
    2 Tbsp. mustard seed
    1 Tbsp. celery seed
    1 1/2 tsp. turmeric
    4 c. cider vinegar
    2 c. water
Preparation
    Grind all vegetables; sprinkle with the pickling salt.
    Let stand overnight; rinse and drain.
    Combine the sugar, mustard seed, celery seed, turmeric, vinegar and 2 cups water.
    Pour over vegetables.
    Bring to a boil and boil gently for 5 minutes.
    Fill hot jars, leaving 1/2-inch headspace.
    Adjust lids.
    Process in boiling water bath for 5 minutes.
    Makes 9 pints.
