Microwave Buttermilk Candy - cooking recipe

Ingredients
    2 c. sugar
    1 tsp. soda
    1 c. buttermilk
    3/4 c. butter or margarine
    1 tsp. vanilla
    2 c. chopped pecans
Preparation
    In a large microwave-oven-safe bowl, combine sugar, soda, buttermilk, and butter.
    Cover with plastic wrap.
    Punch holes in wrap.
    Cook in microwave oven for 2 1/2 minutes.
    Stir and turn dish.
    Continue cooking for 15 minutes, stirring every 5 minutes. Return to oven for every 2 minutes, or until soft ball forms in cold water, or it tests 235\u00b0 to 236\u00b0 on candy thermometer (do not put thermometer in microwave unless it's microwave-safe).
    Add vanilla and beat with electric mixer until soft peaks form.
    Stir in pecans, and spread in buttered 12x7-inch dish.
