Portuguese Fried Potatoes - cooking recipe
Ingredients

3 Tbsp. butter
3 Tbsp. olive oil
1 1/2 lb. new potatoes, peeled and sliced into 1/4-inch rounds
1/2 tsp. salt
freshly ground pepper (optional)
1 Tbsp. finely chopped parsley
Preparation

In a heavy 10 to 12-inch skillet, melt the butter in the olive oil over moderate heat.
When the foam begins to subside, add potatoes, turning them frequently.
Cook for 15 minutes until tender and golden brown.
Season with salt and pepper.
Transfer to heated bowl or platter; sprinkle with parsley and serve.
