Fried Rice - cooking recipe
Ingredients

8 c. cooked rice (cold)
1 lb. lean pork, cut into very thin strips (2 to 3-inches long)
4 young spring onions, chopped
1 or 2 fresh chilies (if available)
1/2 lb. shrimp (small)
1/4 to 1/2 c. celery, cut diagonally
4 Tbsp. vegetable oil
1 c. peanuts or cashews
1 c. raisins
1 or 2 eggs
2 lettuce leaves
salt and pepper
lite soy sauce
Preparation

In a large pan or wok; fry onions and celery in oil until soft.
Fry pork strips.
Add cold rice and shrimp.
Stir until hot.
Season with salt, pepper and soy sauce.
Make a light omelet with the eggs (I use Egg Beaters); roll and slice in thin strips. Place rice mixture on a platter or in a large bowl.
Garnish with omelet strips, green onions, raisins, nuts and strips of lettuce. Serve hot, using more soy sauce if desired.
