Shrimp With Peach Salsa - cooking recipe

Ingredients
    2 Cups diced fresh peaches
    1/4 Cup thinly sliced green onion
    3 Tbsp. orange juice
    1 tsp. grated lime rind
    2 Tbsp. chopped, seeded jalapeno pepper
    1 Tbsp. chopped cilantro
    1 Tbsp. honey
    1 tsp. minced, fresh, peeled ginger
    1 1/2 lb. pre-cooked shrimp with tails on
Preparation
    Combine all ingredients except shrimp in medium bowl.
    Cover and chill.
    To assemble plate: Spoon a small mound of peach salsa in center of each plate and arrange the shrimp around the mound. Garnish with lime and cilantro.
