Crustless Spinach Quiche - cooking recipe

Ingredients
    1 large onion, chopped
    1 Tbsp. vegetable oil
    1 (10 oz.) pkg. frozen, chopped spinach, thawed and pressed dry
    5 eggs, beaten (Egg Beaters)
    3 c. (12 oz.) Muenster cheese
    1/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Saute onion in oil in a large skillet until tender.
    Add spinach and cook until excess moisture evaporates.
    Cool.
    Combine eggs, cheese, salt and pepper.
    Stir into spinach mixture.
    Pour into a greased 9-inch pie plate.
    Bake at 350\u00b0 for 30 minutes or until set.
    Yields 1 (9-inch) quiche, 6 servings.
