Lemon Delight - cooking recipe

Ingredients
    1 small box lemon jello
    1/3 c. honey
    1 Tbsp. lemon juice
    rind of 1 lemon, grated (optional)
    1 small can evaporated milk
    graham cracker crumbs
Preparation
    Dissolve jello in 1 1/4 cups boiling water.
    Add honey, lemon juice and grated lemon rind.
    When mixture gets thick (soupy), fold in whipped cream made with the can of milk.
    Line bottom of cake pan with graham cracker crumbs.
    Gently spoon mixture over. Sprinkle more graham cracker crumbs over top.
    Chill well.
    This is a wonderful light dessert for summer.
    For a 9 x 13-inch pan, I double recipe.
