Mozzarella Eggplant - cooking recipe

Ingredients
    1 medium eggplant
    3 Tbsp. melted butter or margarine
    Mozzarella cheese
    salt and pepper
Preparation
    Cut eggplant into crosswise slices 1/3-inch thick.
    Peel and place slices on foil-lined broiler pan.
    Brush with melted butter; sprinkle with salt and pepper.
    Broil until golden brown; turn, brush with butter and season.
    Broil until golden brown.
    Top pieces with Mozzarella cheese and brown until cheese bubbles. Makes 4 to 6 servings.
