Sausage And Sweet Potato Casserole - cooking recipe
Ingredients

8 medium sweet potatoes
2 Tbsp. butter or margarine
1 tsp. salt
2 eggs, well beaten
1 Tbsp. heavy cream
1 lb. small pork sausages
Preparation

Boil sweet potatoes until tender.
Drain and peel.
Mash and beat well, adding all ingredients and enough cream to make mixture light and fluffy.
Pour into casserole and press sausages into surface.
Bake at 400\u00b0 about 15 minutes or until sausages are brown.
Reduce heat to 350\u00b0 and cook 10 minutes more.
Serves 6.
