Morning Glory Muffins - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 tsp. baking soda
    2 c. grated carrots
    1/2 c. coconut
    1 (8 oz.) can crushed pineapple, drained
    3 large eggs, lightly beaten
    1 1/3 c. sugar
    1 tsp. salt
    1/2 c. raisins
    1/2 c. chopped pecans
    1 c. vegetable oil
    2 tsp. vanilla
Preparation
    Combine flour, sugar, soda and salt in a large mixing bowl. Stir in carrots, raisins, coconut, pecans and pineapple.
    Make a well in center of mixture.
    Combine vegetable oil, vanilla and eggs.
    Add to flour mixture, stirring just until moistened.
    Place paper baking cups in muffin pans.
    Spoon batter into paper cups, filling 2/3 full.
    Bake at 350\u00b0 for 25 minutes or until golden brown.
    Remove from pans immediately.
