Sweet Potato Pie - cooking recipe

Ingredients
    pastry for 9-inch one crust pie
    2 eggs
    2 c. mashed, cooked sweet potatoes
    3/4 c. sugar
    1/2 tsp. salt
    1 tsp. ground cinnamon
    1/2 tsp. ground ginger
    1/4 tsp. ground cloves
    1 2/3 c. evaporated milk or half and half
Preparation
    Heat oven to 425\u00b0.
    Prepare pastry.
    Beat eggs slightly with hand beater; beat in remaining ingredients.
    Place pastry lined pie plate on oven rack.
    Pour in filling.
    Bake for 15 minutes. Reduce oven temperature to 350\u00b0.
    Bake until knife inserted in center comes out clean; refrigerate.
    Serve with sweetened whipped cream, if desired.
    Refrigerate any remaining pie immediately. Makes 6 servings, 440 calories per serving.
