Velma'S White Fruit Cake - cooking recipe

Ingredients
    2 1/2 c. sugar
    3 1/2 sticks margarine
    1 1/2 oz. lemon extract
    3 3/4 c. flour
    2 tsp. baking powder
    6 eggs, separated
    1/2 lb. candied cherries
    1/2 lb. candied pineapple
    1 box white raisins
    1 can or pkg. frozen coconut
    1 lb. pecans
Preparation
    Cream butter and sugar.
    Add beaten yolks and extract.
    Sift dry ingredients together and add to creamed mixture.
    Add fruit. Last add beaten egg whites.
    Grease and line pan of choice with brown paper.
    This will make one tube cake or two loaf cakes.
    Bake 2 hours at 250\u00b0 if baked in loaf pan.
    Will take longer in tube pan, probably about 5 hours.
