Chicken Diane(Serves 4) - cooking recipe
Ingredients

4 large chicken breast halves, pounded slightly
1/2 tsp. salt
1/4 tsp. pepper
2 Tbsp. oil
2 Tbsp. butter
3 Tbsp. fresh chopped chives
juice of 1/2 lemon
2 Tbsp. brandy (optional)
3 Tbsp. chopped fresh parsley
2 tsp. Dijon mustard
1/4 c. chicken broth
Preparation

Sprinkle chicken with salt and pepper.
Heat 1 tablespoon of each, butter and oil, in large skillet.
Cook chicken 4 minutes on each side over high heat.
Transfer to warm dish.
Add chives, parsley, brandy, lemon juice and mustard to pan.
Whisk constantly for 15 seconds.
Add broth until sauce is smooth.
Whisk in butter and oil and pour over chicken.
Serve immediately.
