Eggplant Patties - cooking recipe

Ingredients
    1 medium eggplant
    1 small onion, diced
    1 egg
    1/2 tsp. salt
    1 1/2 c. cracker crumbs
    1/8 tsp. pepper
    corn meal
Preparation
    Peel eggplant, dice.
    Cook with onion in small amount of boiling salted water (1/2 teaspoon salt to 1 cup water) until very tender.
    Drain.
    Cool.
    Add egg and mix well, mashing eggplant. Add salt, pepper and cracker crumbs, mix.
    Pat rounded tablespoons of mixture into patties on board sprinkled heavily with corn meal; turn patties and press thin.
    Pan-fry quickly in generous amount of hot oil until brown and crisp.
    Yields 8 servings.
