Ingredients

4 eggs
1 1/2 c. milk
1/2 c. light corn syrup
1/2 c. sugar
1/4 tsp. salt
1 tsp. cinnamon
1 1/2 tsp. nutmeg
2 tsp. butter, melted
1 1/2 lb. sweet potatoes
Preparation

Butter a 10 x 6 x 2-inch baking dish or shallow 1 1/2-quart casserole dish.
In a large bowl, beat eggs until well blended. Stir in milk and corn syrup.
In a small bowl, mix togehter the sugar, salt, cinnamon and nutmeg.
Add to the egg mixture and stir until well blended.
Add butter and stir in.
Peel and finely shred sweet potatoes, measure 4 cups.
Add to egg mixture and stir until well mixed.
Turn into the prepared baking dish.
Bake at 350\u00b0 until set, about 45 minutes.
Top should be golden brown.
Cool slightly and serve as is, or with vanilla ice cream.
