Strawberry Pecan Bread - cooking recipe

Ingredients
    2 eggs
    1 c. granulated sugar
    1/2 c. cooking oil
    1 1/2 c. flour
    2 tsp. ground cinnamon
    1 tsp. baking soda
    1/2 tsp. salt
    1 (10 oz.) pkg. frozen sliced strawberries, partially thawed
    1 1/2 c. coarsely chopped pecans or walnuts
Preparation
    In a mixer bowl, beat eggs.
    Add sugar and oil.
    Beat until well combined.
    Add flour, cinnamon, baking soda and salt.
    Beat until well blended (batter should be thick).
    Stir in partially thawed, undrained berries and nuts.
    Pour batter into a greased 9 x 5 x 3-inch loaf pan or two 7 1/2 x 3 1/2 x 2-inch loaf pans. Bake in 350\u00b0 oven for 55 to 65 minutes, or until toothpick inserted in the middle comes out clean.
    Let cool in pan for 10 minutes.
    Remove and cool on wire rack.
    Freezes well.
    I usually double recipe.
    This will make 4 loaves when doubled.
