7-Up Pineapple Cream Salad - cooking recipe
Ingredients

1 (7 oz.) bottle or 1 c. 7-Up
2 1/2 c. miniature marshmallows
1 (3 oz.) box lime jello gelatin
2 (3 oz. size) pkg. cream cheese
1 Tbsp. lemon juice
1 can crushed pineapple (No. 2, undrained, 2 1/4 c.)
3/4 c. heavy cream, whipped or 1 pkg. dessert topping mix, prepared according to pkg.
Preparation

Combine beverage (7-Up) and marshmallows in top of double boiler; heat over boiling water until marshmallows are melted. Pour over lime gelatin; stir until dissolved.
Have cream cheese at room temperature.
Add hot mixture slowly to cream cheese and beat until smooth.
Add lemon juice, crushed pineapple and walnuts.
Chill until partially set and thick.
Fold in whipped cream; blend thoroughly.
Pour into an oiled 2-quart mold or dish and refrigerate until firm.
