Zucchini Casserole - cooking recipe

Ingredients
    1 large zucchini
    1 large onion
    2 chicken bouillon cubes
    8 oz. cream cheese
    1 stick margarine or butter
    3 eggs
Preparation
    Peel zucchini.
    Cut into small cubes, discarding seeds.
    In a saucepan, put zucchini, onion, bouillon cubes and 1 cup water. Cook until zucchini and onion are soft.
    Drain.
    Soften cream cheese and butter or margarine in microwave.
    Beat 3 eggs; add cream cheese and butter and beat again.
    Mix in zucchini and onion.
    Pour in 2-quart casserole and top with buttered croutons. Bake as you would a pumpkin pie at 350\u00b0 for 40 to 50 minutes.
