Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant, peeled and cut into cubes
    1/2 tsp. pepper
    1 green pepper, chopped
    2 tsp. salt
    6 medium tomatoes, sliced
    1 large onion, chopped
    1/3 c. olive oil
    1 tsp. oregano
Preparation
    Brown all ingredients except tomatoes in olive oil. Stir in seasoning.
    Alternate eggplant mixture with tomatoes in 1 1/2-quart casserole dish.
    Bake 40 minutes at 400\u00b0.
