1/2 c. pine nuts
1 c. long grain white rice
1 c., 3 Tbsp. olive oil
1 c. finely chopped yellow onion
3 green onions, finely chopped
1/4 c. minced fresh parsley
2 Tbsp. minced fresh mint
1 tsp. ground cinnamon
1/2 tsp. ground allspice
1/2 tsp. salt
1/4 tsp. fresh black pepper
16 oz. brine packed grape leaves
3/4 c. fresh lemon juice
1 c. heated vegetable stock
fresh parsley
Preparation

Toast the pine nuts in a heavy skillet over medium heat, stirring frequently, approximately 5 minutes until golden.
Cool.
