Yellow Squash Casserole - cooking recipe
Ingredients

4 to 5 medium yellow squash, peeled and sliced
1 medium onion, chopped
1 can cream of chicken soup
1 c. sour cream
1 c. shredded raw carrots
1 stick oleo
1 (8 oz.) pkg. chicken stuffing mix
Preparation

Cook squash and onion 5 minutes in water.
Mix together soup and sour cream.
Fold in shredded carrot, squash and onion.
Melt oleo in saucepan.
Spread 1/2 stuffing mix in bottom of 8 x 8 x 2-inch pan.
Pour vegetable mixture over stuffing.
Top with remaining stuffing mix.
Bake at 350\u00b0 for 30 minutes.
Let stand 15 minutes before serving.
