Mock Sausage - cooking recipe

Ingredients
    1 c. dried lima beans or 3 c. cooked limas
    3 eggs, divided
    salt and pepper to taste
    1/2 tsp. sage or 1 tsp. poultry seasoning
    2/3 c. bread crumbs
    2 Tbsp. vegetable oil
Preparation
    Wash dried beans, cover with water and soak overnight.
    Drain. Cook in salted boiling water until tender, about 1 hour.
    Drain and press through a strainer.
    Add 2 beaten eggs, seasoning, salt and pepper.
    Form into patties.
    Roll in crumbs, then in 1 beaten egg, then in crumbs again.
    Saute in hot oil until brown.
    Good with tomato sauce.
