Pickled Mushrooms - cooking recipe

Ingredients
    2 (12 oz. each) pkg. fresh mushrooms, stems trimmed
    2/3 c. tarragon vinegar
    2 garlic cloves, crushed
    1 1/2 tsp. salt
    2 Tbsp. water
    1 small onion, chopped
    1 Tbsp. dried tarragon
    1/2 c. vegetable oil
    1 Tbsp. sugar
    dash of pepper
    dash of hot pepper
    1 Tbsp. chopped parsley
Preparation
    Combine all ingredients, except mushrooms, in large bowl.
    Mix well, then add mushrooms.
    Store in refrigerator overnight, stirring occasionally, so all mushrooms are soaked.
    Store in covered container for up to 2 days.
