Meatless Spaghetti Sauce - cooking recipe

Ingredients
    1/4 c. olive oil
    6 Tbsp. butter
    1/2 lb. onions, diced
    3 garlic cloves
    10 parsley sprigs
    1 tsp. salt
    1/2 tsp. pepper
    2 medium green peppers, diced
    1 1/2 c. canned, peeled plum tomatoes, chopped or sieved
    2 large ripe tomatoes, chopped
    2 Tbsp. tomato paste
Preparation
    Combine olive oil and butter in skillet and heat.
    Add onions and brown slowly for 10 minutes.
    Chop garlic and parsley together and add to onions, along with salt and pepper.
    Cover and cook for 10 minutes.
    Add green peppers and cook 5 minutes.
    Add canned and fresh tomatoes and cook slowly for 40 minutes.
    Add tomato paste, stir well and remove from heat.
    Add more salt, if necessary. Serve over pasta.
    Makes about 4 cups.
