Favorite Colorful Scalloped Potatoes - cooking recipe
Ingredients

4 medium-sized potatoes, peeled and thinly sliced
1 green pepper, shredded
1 carrot, shredded
1 medium-size onion, chopped
1 or 2 Tbsp. butter or margarine for flour
2 Tbsp. flour
2 c. milk (skim or other type)
chopped parsley (fresh)
1/3 c. shredded cheese (American or other)
Preparation

In well-greased 1 1/2-quart casserole dish, arrange layers of potato slices, sprinkling each layer with green pepper, carrot and onion.
In saucepan melt butter and blend in flour.
Add milk and cook, stirring constantly, until mixture is thickened and smooth. Add parsley, seasoned with a little salt and pepper to taste. Pour over potatoes.
Sprinkle with cheese.
Bake covered in 350\u00b0 oven for about 40 minutes, then uncover and bake until potatoes are tender and cheese is delicately browned.
Serves 4.
