Confetti Scalloped Potatoes - cooking recipe

Ingredients
    1/2 c. oleo
    1/2 c. chopped onion
    16 oz. pkg. frozen hash browns
    1 can mushroom soup
    1 soup can milk
    4 oz. shredded Cheddar cheese
    1 small green pepper, cut in strips
    2 Tbsp. chopped pimiento
    1 c. cracker crumbs, divided
Preparation
    Melt butter.
    Saute onion.
    Stir in potatoes, soup and milk. Add cheese, green pepper, pimiento and 1/2 cup cracker crumbs. Pour into shallow casserole.
    Top with remaining cracker crumbs. Bake at 375\u00b0 for 6 to 8 servings.
